Pickled Onions
Ingredients:
1 medium red onion, sliced thin (about 1 1/2 cups)
1 cup red wine vinegar
1/3 cup sugar
2 jalapeno chiles, stemmed, seeded, and cut into thin rings (optional)
1/4 teaspoon table salt
Directions:
Place onions in a medium microwave safe, preferably glass, container (about 2 cups volume). Bring vinegar, sugar, jalapenos, and salt to a boil (about 2 minutes) stir, repeat another (1-2 minutes) until sugar dissolves.
Pour vinegar mixture over onions, cover loosely, and let cool to room temperature, about 30 minutes. Once cool, they can be stored in a sealed container in the refrigerator.
