Salmon with Spicy Mayonnaise

Ingredients:

Fresh or flash frozen wild caught salmon (about 1/3-1/2 lb per person)

Extra-virgin olive oil

Salt and pepper

Mayonnaise

1 can chilis in adobo sauce

 

Directions:

Thaw salmon if frozen

Turn oven to 200 degrees F

 

Blend chilis in adobo sauce until smooth

Add ¼ - ½ tablespoon blended chilis to 1 cup mayonnaise (adjust for preferred spiciness)

 

Pat dry and place on oiled baking sheet

Coat salmon with olive oil

Sprinkle with salt and pepper

Bake until salmon reaches internal temperature of 125 degrees F

Remove from oven and tent with foil until ready to eat or refrigerate once room temperature if serving later

Serve warm or at room temperature with mayonnaise
