Tofu Scramble
Ingredients:
1 14-oz block extra-firm tofu, drained
2 14.5-oz cans black beans, rinsed, drained well
¼ cup almond butter
¼ cup mayonnaise
2 garlic cloves, finely grated
4 teaspoons chili powder (salt free)
4 teaspoons Diamond Crystal or 2 teaspoons Morton kosher salt
2 cups cooked red quinoa, cooled
Serves 4-6
Directions:
Turn oven to 300 degrees F
Cut tofu block in half and place on towel to absorb moisture
Once tofu moisture reduced, crumble tofu
Place beans and tofu on large baking sheets and cook at 300F until relatively dry
In a large mixing bowl, mix tofu, beans, almond butter, mayonnaise, and spices
Serve straight from refrigerator or warmed
Works well for salad topper, making protein bowls, etc
