15-Minute Turkey Bean Chili

Ingredients:

2 (15 ounce) cans low-sodium black beans or red beans (or 1 can of each), rinsed and drained

1 lb ground turkey (93% lean)

½ cup diced red onion

1 (10 ounce) can Rotel dice tomatoes and green chilies

3 Tbsp reduced sodium taco seasoning

½ cup shredded cheddar cheese

½ cup low fat sour cream or plain Greek yogurt for topping

Directions: 

Place 1 can of beans in the blender with ¾ cup water and puree until smooth.

Set a large pot over medium heat and spray with olive oil.  Add the turkey and cook, breaking it up with a wooden spoon until cooked through (4-5 min).  Add the red onion and cook until softened, 2-3 minutes.  Add the tomatoes, second can of beans, the pureed beans and taco seasoning.  Bring to a boil over medium heat.  Reduce the heat to low, cover and simmer until thickened, 10-15 minutes.

Serve topped with the cheddar and sour cream or Greek yogurt.
