Turkey Unstuffed Pepper Bowls

Ingredients:

1 1/3 lbs ground turkey (93% lean)

1 Tsp ground cumin

1 small yellow onion, diced

3 small bell peppers cut into ½ inch pieces

3 garlic cloves, minced

1 (8 ounce can) tomato sauce

4 cups brown rice (can also used cauliflower rice)

Directions: 

Set a large skillet over high heat and spray with olive oil.  Add the turkey and season with the cumin and 1 Tsp Kosher salt.  Cook, breaking the meat up, until the turkey is cooked through (~ 5 minutes).  Transfer to a medium bowl and set aside.

Using the same pan, heat ½ Tbsp olive oil over medium heat.  Add the onion and bell peppers and season with ½ Tsp kosher salt and freshly ground black pepper.  Cook until softened (5-6 min).  Add the garlic and cook for about 1 minute.  Add the cooked ground turkey, tomato sauce and ½ cup water.  Cover and simmer, stirring occasionally, approx. 20 min.

Divide the rice among small bowls and top with turkey mixture.
